A Bit About Miranda
Miranda's professional journey began in the restaurant industry in 2001, starting with the creation of cinnamon rolls for Claudia's Cinnamon Rolls before steadily advancing through the culinary ranks. This progression led to a position at The Cheese Shop, a fast-paced brunch venue in downtown San Diego, where she started as a prep cook and swiftly advanced to a Grill Cook. Demonstrating continuous skill development, she later joined Style Restaurant Group, serving as a chef and Back of the House Manager for two of their establishments, Entoeca Style and Salad Style. They then held the position of Chef DE Cuisine at The Blind Burro. Following this extensive restaurant career, Miranda successfully pivoted her focus nearly 10 years ago to meal planning and catering for Lucky Bolt, an experience that significantly deepened her commitment to nutrition and ultimately fueled her aspiration to become a registered nutritionist.

Furthermore, She was responsible for inventory management, ordering necessary provisions, maintaining positive vendor relationships, and deepening her knowledge of old-world wines and complementary food pairings.
At The Blind Burro, Miranda served as the Chef DE Cuisine, where her duties expanded beyond standard kitchen management. She was directly responsible for creating menu specials and significantly deepening Her expertise in authentic traditional Mexican cuisine. Managerial responsibilities included inventory control, alongside key team leadership functions such as team building and delegation.

At Lucky Bolt, the Miranda has dedicated nearly the past decade to applying her culinary expertise to the realm of meal planning and catering. She has been instrumental in the company's growth, helping it transition from a startup operating out of a shared kitchen to securing its own dedicated establishment. Her main responsibilities included creating dishes for the weekly dinner program and handling various managerial duties. More recently, to accommodate educational pursuits, they adjusted Her hours and took charge of baking all the gluten-free items on the menu, all while helping clients realize their family food traditions through catering.
